Most households have a handful of recipes they make repeatedly, written in cups and spoons and inherited from somewhere. Converting them once produces a version that works every time.
Do Not Use a Conversion Table
The counter-intuitive first instruction. A table gives an average figure for a cup of flour, and your cup and your scooping method are not the average.
If the recipe works when you make it, the quantities you actually use are correct. Recording those is more valuable than replacing them with somebody else’s numbers.
The Method
- Make the recipe exactly as you normally do
- Weigh each ingredient as you add it, using tare between each
- Write the weights next to the volume measures
- Note the pan size, oven temperature and actual time taken
- Make it once more from the weights to confirm
Nothing changes about the recipe. You are recording what you already do in a unit that does not drift.
Weigh Cumulatively
The technique that makes this painless. Put the bowl on the scale, tare, add flour, note the reading, tare again, add sugar, note that reading.
Every ingredient goes into one bowl and nothing else is dirtied. Flat-platform models designed to sit under a mixing bowl, of the kind across the escali scale range, suit this directly.
Record More Than the Weights
The things that get forgotten and matter as much.
The exact pan size and material. The actual oven temperature if you have checked it with a thermometer. The real time it took rather than the time the original said. The internal temperature at which it was done, for anything baked or roasted.
Those turn a recipe into something reproducible by somebody else, including your future self.
Note the Ingredient, Not Just the Amount
Two hundred grams of flour is meaningless without knowing which flour. Plain, strong, self-raising and wholemeal behave completely differently.
The same applies to sugar type, salt type and fat. Coarse and fine salt differ enormously by volume and only slightly by weight, which is one more argument for the conversion.
Then Convert to Percentages
For anything you scale, expressing the ingredients as percentages of the main one makes any batch size a single multiplication.
It also makes the structure of the recipe visible, which is how you begin to understand why it works rather than only that it does.
Keep It Somewhere Findable
A note on a phone, a card in a box, a shared document. The version that gets lost is the one written on the back of an envelope during the bake.
Family Recipes Especially
Recipes passed down verbally are the ones most at risk, and they are usually the ones where a knack rather than a number was being transmitted.
Weighing what somebody does while they do it captures the knack in a form that survives.
